Cinnamon Apple Jelly

  • Prepare home canning jars and lids according to manufacture's instructions.
  • Jars must be covered with water and boiled 10 minutes to sterilize.
  • Combine apple juice, lemon juice, red hots, water, food coloring, mace and pectin.
  • Tie cloves and cinnamon stick in a spice bag.
  • Add spice bag to juice mixture.
  • Bring mixture to a boil, stirring constantly.
  • Add sugar, stirring to dissolve.
  • Bring to a rolling boil.
  • Boil hard for 2 minutes.
  • Remove from heat and skin foam, if necessary.
  • Carefully ladle hot jelly into hot jars, leaving 1/4" head space.
  • Wipe jar rim clean.
  • Place lid on jar with sealing compound next to glass.
  • Screw band down evenly and firmly.
  • Do not use excessive force.
  • Process jelly 5 minutes in a boiling water canner.

  1. A well-written recipe for a delicious jelly. This recipe is easy enough for relatively inexperienced canners since it details every step clearly. I did not have mace, so I put 8 allspice berries in the spice bag. It was sweet and spicy, but I may try a few more cloves next time for an even spicier taste. This recipe makes a gorgeous red jelly that would be ideal for a holiday housewarming or other gift occasion, or just to enjoy!
     
  2. This was absolutely, positively fantastic! Made this to give as Christmas presents. I was given a large bag of Mac apples that I juiced to make and boy did this smell good cooking. Jelled perfectly.. tasted FANTASTIC. Will be making every year!
     
  3. Delicious!!! This recipe has been a big hit within my circle of friends, and even though I'm not an experienced canner or jelly maker, the instructions are easy to follow. My hint is, instead of tying the cloves and cinnamon into a discardable spice bag, I used a large reusable tea ball. I also chose not to include the mace or the food coloring.
     
  4. Today was my very first attempt at canning - a technique I've always wanted to master but either never found the courage or the time, until now - and I have to say I'm very proud of myself! I just finished making my first batch of this gorgeous jelly -- didn't even need the red food coloring as the cinnamon candies gave plenty of color. I used the tiny 4-oz jars, and got 9, with a little bit extra (for the cook!). The jelly sets up wonderfully, and I can't wait to give this as part of my Christmas gifts this year. Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
