Ranch Potato Cubes

"These look very good. Recipe is from Simple and Delicious. Update 3/21/09: I've made these recently and I think I will use only half of the ranch dressing mix the next time because I felt it was a little too strong. I will leave the original recipe as is, though."

  • Place potatoes in a greased 11-inch by 7-inch baking dish; dot with butter.
  • Cover and bake at 325 degrees for 60-65 minutes or until tender.
  • Combine sour cream and salad dressing mix; spoon over potatoes.
  • Sprinkle with cheese.
  • Bake, uncovered, for 5-10 minutes or until cheese is melted.

  1. These are soooo good! I've been on a big potato kick & these are delish! I skipped the butter but otherwise made as stated. They're so easy to put together and the flavors mix well. My hubby hates ranch and sour cream and he still liked these! You can taste the ranch mix but it just adds a nice seasoning while the sour cream gives them a creamy & rich coating. Thanks for the awesome recipe :)

  3. These are a quick little potato to throw together and it makes the perfect side to any meal. The ranch comes thru nicely as I used just about an ounce worth of the dry dressing. Perfect! Made for 123Hits~
